Ginataang Kalabasa/Squash Soup
							
"Ginataang Kalabasa / Squash Soup 
Serves 2-3, adjust to feed more people

It’s already almost August and the weather’s getting cooler! This creamy and hearty soup makes for a perfect dinner appetizer or even the main course!

Ingredients: 
- 2 cloves garlic (minced)
- 1 red onion (minced)
- 2 tbsps neutral oil
- 1 kilo squash (chopped into cubes)
- 3 cups chicken broth, vegetable broth
OR  3 cups water and x1 broth cube of choice
- 1 cup coconut milk
- Salt and pepper

How to prepare:
1. Saute the squash in a soup pot with neutral oil. After 1 minute, add the minced onion and garlic and saute for 4-5 minutes until the squash  is cooked
2. Add salt and pepper, mix and saute for 1 minute
3. Add broth of choice. Mix and let it simmer in medium heat for about 10 minutes or until the squash starts to soften.
4. Add coconut milk and stir until everything’s brought to a boil.
5. Turn off heat and top with either onion leeks or malunggay leaves (optional and also available on our website)
