Hearty Mung Bean Soup
							
"Hearty Mung Bean Soup
Serves 3-4, adjust according to preference

An easy, affordable, hearty, and customizable soup. Great for the cold January weather!

Ingredients: 
x 1½cups  raw mung beans
x 2 cups water
x 2 tablespoons oil
x 1 small tomato, diced
x 1 onion, chopped
x 4 cloves garlic, minced
salt and ground black pepper to taste
x1 cube or x1 cup broth of choice
x 1 pork  strips (optional)
x ½ cup coconut milk/gata (optional)

How to prepare:
1. Bring the mung beans and the water to a boil in a pot until the beans are soft and mushy (about 40 minutes) Add water if needed to prevent beans from drying out/burning.
2. Mash the beans; set aside.
3. Heat oil in a large pot over medium heat, add the onion and garlic. Cook until softened.
4. Add the pork; season with salt and pepper. 
5. Add the tomatoes; cook another 3 minutes. 
6. Reduce heat, pour/add the broth over the mixture; allow the mixture to simmer in the broth for 5 minutes. Add water until desired consistency is reached.
7.  Stir the coconut milk into the soup and cook 2 minutes more before serving hot.

Green tip 
Did you know that you can sprout your own mung beans instead of buying them from the store? Here's how!

1. Use a colander or strainer to thoroughly rinse your mung beans with clean water in the sink.
2. In a mason jar or similar container, a cup of mung beans to one and a half cups of cool water. 
3. Place a cheesecloth or paper towel on the top of your container with a rubber band so that your beans can breathe. 
4. Soak your beans for eight to twelve hours at room temperature until they sprout.
5. After 12 hours, strain your beans. You can pour the water out of the top of the jar through a cheesecloth, or use a strainer. Rinse and drain the beans once a day for two days until they begin to sprout white tails. Make sure that the cheese cloth stays damp.
6. Put the ready sprouts over a paper towel to try them.
7. Keep sprouts in the fridge and away from direct sunlight.
