Leche Flan
"Leche Flan Serves 3-4, adjust according to preference The sweet, creamy goodness, mixed with a light and balanced nature of Leche Flan is the reason it's one of the most popular desserts in the Philippines. Summer is here, start it off with this delicious dessert. Ingredients: x10 eggs x1 can condensed milk ( around 14 oz) x1 cup fresh milk of choice x1 cup sugar x1 tsp vanilla extract How to prepare: 1. Separate the yolks from the egg whites. There are tools for this and its easy to do it manually as well. 2. Refrigerate the egg whites and use them later on. Place the egg yolks in a big bowl then beat constantly for 2 minutes. 3. Add the condensed milk and mix thoroughly 4. Add fresh milk and vanilla extract. Mix well. 5. Put the mold on top of the stove and keep in low heat. 6. Add the sugar to the mold and mix thoroughly until it is caramelized (turns into a brown liquid) 7. Spread the caramelized sugar evenly on the flat side of the mold. Wait for 5 minutes. 8. Pour the egg yolk and milk mixture on top of caramelized sugar. Cover the top of the mold using aluminum foil. 9. Steam the mold with egg and milk mixture for 30 minutes. Let cool then refrigerate. 10. Once refrigerated, you can transfer it to a serving container and eat for dessert. Green Tip/s: In making recipes that only use the egg yolks such as Leche Flan, You may freeze the egg whites instead of throwing them out. They can last up to a year frozen but are best when used within 2 months. "
