Salmon Strawberry Salad
"Salmon Strawberry Salad Serves 3-4, adjust according to preference Nothing says I love you like a fresh homecooked meal for mom. On top of that, it is a great way to save on money and fuel. This salad is tangy, fresh, healthy, and perfect for the whole family on Mother's day. INGREDIENTS x8 cups salad greens (we recommend Fresh Produce's Lolo Rosso Greens) x1 kilo salmon steak (seared in olive oil and salt) x300g korean strawberries, sliced x100g feta cheese, crumbled x1 red onion, thinly sliced (alternately you can use JoChef's dried onions) x1/2 lemon x1/2 cup balsamic vinegar x1/2 cup olive oil Salt and pepper HOW TO PREPARE 1. Place the washed salad greens into a large salad bowl 2. Top with sliced strawberries, feta cheese and onion slices. 3. Add the seared salmon steak on top. 4. Sprinkle lightly with salt and freshly ground black pepper. 5. Mix lemon juice with balsamic vinegar in a separate bowl. 6. Drizzle the salad with olive oil and lemon vinaigrette, Green Tip HOW TO STORE STRAWBERRIES (and other berries longer) 1. Wash them with a 1 part vinegar 2 parts water solution before storing in the fridge. They will last a week longer. 2. Keep them in a glass jar in the fridge instead of their original packaging. They will last for 3 weeks longer. 3. Place them on a ziplock in the freezer for smoothies or sauces. They can last for 3 months. "
